A simple veg mixed sabji that is hassle free to cut and can be made within just 5 minutes.

Ingredients 🙁 Serves 6 )

  • 500gm Brinjal / Baingan / Eggplant
  • 1 Big Capsicum / Shimla Mirch
  • 5 medium Onion
  • 5 Medium Tomatoes
  • 5 tbsp Oil
  • Salt
  • 1/2 tsp Cumin / Zeera
  • 1/2 tsp Carom / Ajwain
  • 3 Cloves / Loung
  • 1 tsp Ginger & Garlic paste
  • 2-3 Chillies
  • 1 tsp Red Chilli powder
  • 1/2 tsp Turmeric / Haldi
  • 1/2 tsp Coriander powder / Dhaniya
  • 1/2 tsp Cumin powder ; Zeera
  • 1/2 tsp GARAM Masala
  • 1 tbsp Green Coriander / Dhaniya

Method:-

  1. Roughly chop the Brinjal and Capsicum.
  2. Divide Onions and Tomatoes in four parts.
  3. Heat Oil adding Salt to it.
  4. Fry Eggplant till golden brown.
  5. Remove excess Oil and keep 1-2 tablespoons for cooking.
  6. In the hot Oil now add Cumin,Carom and Cloves keeping heat to low.
  7. Within few seconds then add Onion along with it Garlic & Ginger paste.
  8. Add chopped Chillies,Salt to taste,Tomatoes,Capsicum.
  9. Sauté over medium to high for about 5 minutes and then add Red Chilli powder,Turmeric,Coriander powder and Cumin powder.
  10. Nicely coat the veggies with spices and sauté it for just couple of minutes more and then add 1-2 cups of Water as much gravy required along with fries Eggplants.
  11. Let it cook over low for 5 minutes.
  12. Then sprinkle Garam masala and chopped green Coriander.
  13. SERVE

Tips :-

  • Adding Salt in Oil helps in less absorbing of Oil
