Mexican Rice

Mexican rice as name says is recipe from Mexico with keeping it simple authentic way of making let’s make it Indian Style.

Ingredients:-

  • 1.5 cup Basmati rice / basmati chawl
  • 2 cups Water / Pani
  • 2 tbsp Oil / Tel
  • 1 cup Onion / Pyaz
  • 1 tsp chopped Garlic / Lasan
  • Salt to taste / Namak swad anusar
  • 1 cup chopped Cabbage / Patta Gobhi
  • 1 sliced Capsicum / Shimla Mirch
  • 1/2 cup sweet corn
  • 1/2 cup Peas / Matar
  • 1-2 chillies / Mirch or Jalapeño
  • 1 cup Tomato purée / Tamatar
  • 1 cup chopped fresh Coriander / Dhaniya
  • 1/2 tsp Pepper / Kali ya safad mirch
  • 1/2 tsp Oregano
  • 1 cup pressure cooked Kidney Beans / Rajma
  • 3/4 tsp roasted Cumin powder / Zeera powder
  • 2-3 tbsp Tomato ketchup ( Optional )
  • 1 tsp Kashmiri red chilli powder ( Optional )

GARNISH

  • Lemon / Nimbhu
  • Some fresh Coriander  / Dhaniya

Method:-

  1. Soak Rice in 2 cups of Water for 30 minutes.
  2. In hot Oil add roughly chopped Onion.Saute till Onions soft adding Chopped Garlic.
  3. Add strained Basmati rice.Saute Rice stirring occasionally over medium till the Rice slightly changes colour.
  4. Next add all the veggies saute.over medium for 5-7 minutes adding chopped Chillies,Salt,Pepper,Cumin powder,chopped fresh Coriander and Oregano.
  5. After adding above mentioned ingredients continue sautéing 7-8 minutes
  6. Now add Tomato purée and Kidney beans.Mix adding Water in which Rice was soaked.
  7. Cover let it cook over low for 20-25 minutes or until rice kernels get soft.
  8. Serve hot with Papad or Nachos .

Tips :-

  • Gently sauté the Rice to avoid breaking Rice kernels.
