Mixed Veg Kofta 99 Curry

Make a delicious party style or a Dhaba style restaurant Kofta curry with mixed vegetables and without using a Potato,although you can use a Potato if you like.Come let’s begin.

Ingredients:-

KOFTA

  • 4-5 big florets Cauliflower / Gobhi
  • 2 tbsp Carrot / Gajar
  • 2 tbsp Capsicum / Shimla mirch
  • 3 tbsp Cabbage / Patta gobhi
  • 2 tbsp French Beans / Gavar phali
  • 1 big Onion / Pyaz
  • 2-3 green chillies
  • 1 inch Ginger / Adrakh
  • 5-6 Garlic cloves / Lasan
  • 1 tbsp chopped fresh Coriander / Dhaniya
  • Salt to taste or 1 tsp
  • 1/2 tsp Carom / Ajwain
  • 1/2 tsp Red chilli powder / Lal mirch
  • 3/4 tsp Garam masala
  • 1/2 tsp Chaat masala
  • 1 tsp dry Mango powder / Aamchur
  • 1 tsp Coriander powder / Dhaniya
  • 1/2 tsp Cumin powder / Zeera
  • 6-7 tbsp Bread crumb
  • Oil for frying

KOFTA CURRY

  • 1 tbsp Oil / Tel
  • 2 Bayleaves / Tej patta
  • 1/2 tsp Cumin / Zeera
  • 1 tsp Garlic paste / Lasan
  • 1 tsp Ginger paste / Adrakh
  • 2 Onions paste / Pyaz
  • 1/4 tsp green Cardamom powder / Hari elachi
  • 1/4 tsp Cinnamon / Dalchin
  • 1 pinch Cloves powder / Lounge
  • 1 tsp Kashmiri red chilli powder / Lal mirch
  • 1 cup Tomato puree / Tamatar
  • Salt to taste / Namak swad anusar
  • 1 tsp Coriander powder / Dhaniya
  • 1/2 tsp Cumin powder / Zeera
  • 1/2 tsp Garam masala
  • 1 tbsp chopped fresh Coriander / Dhaniya
  • 1/4 tsp Turmeric / Haldiram
  • 2 tbsp Curd / Dahi
  • 2 cup Water / Pani

Method:-

  1. To a food processor add Cauliflower,Carrot,Capsicum,French beans,Onion,Chillies,fresh Coriander,Ginger and Garlic.Make a coarser Veg mix.
  2. Take out this into a bowl adding Salt,Carom,Red chilli powder,Garam masala,Chaat masala,Dry mango powder,Coriander powder and Cumin powder.Mix adding Bread crumb to bind.into cylindrical balls.
  3. Next fry koftas over medium in hot Oil till golden brown flipping upside down to fry evenly on all sides.
  4. .When done strain out over paper towel.
  5. Now to make gravy in hot Oil keeping low drop Cumin and Bayleaves .Let it sizzle few seconds,then add to to Ginger paste and Garlic paste.
  6. Again within few seconds add Onion paste.Stir fry Onions over a medium heat stirring occasionally till golden brownish in colour.
  7. Keeping heat o low add spices Cardamom powder,Cinnamon powder,Cloves powder and Kashmiri red chilli powder.
  8. Stir and within few seconds add Tomato purée.Cook the Tomato till moisture dries out and Oil separates then adding Salt,Coriander powder,Cumin powder,Garam masala and Turmeric.
  9. After adding spices over low within few seconds add Curd.Stir adding about two cups of Water.Mix and let it come to a boil.
  10. Cover it and then let it cook on low for about 5 minutes.
  11. Add some fresh chopped Coriander.
  12. Pour the hot gravy over the made Koftas about 5 minutes prior of serving so that though Koftas absorb little gravy but still don’t get too soft.

Tips :-

  • You can even use 2-3 Potatoes to bind veg mix.
  • Don’t immediately stir or flip Koftas when added to Oil otherwise being delicate they might break.Wait for 2-3 minutes,let them become firm.
  • You can even enjoy the Koftas as a snack.
  • If you want a smooth gravy after frying Onions grind masala into a paste.
