Basundi is a popular traditional dessert of Gujrat and Maharashtra made usually during festive occasions.
Ingredients:- ( Serve 4 )
- 1 Litre full fat milk
- 1/4 cup Sugar
- 1/4 tsp Green cardamom / Hari elachi
- 1/4 tsp Nutmeg powdered / Jaiphal
- 1 tbsp chopped Cashews / Kaju
- 1 tbsp sliced Almonds / Badam
- 1 tbsp sliced Pistachios / Pista
- Few strands Saffron / Kesar
Method :-
- Roast dry fruits over low heat till change in colour and a nutty aroma.It will take 2-3 minutes.keep aside.
- Keep to boil Milk over medium heat preferably in a nonstick vessel till it gets 3/4 in quantity.
- Intermittently keep on stirring and scraping sides to mix in accumulated fat ( Malai ).
- When Milk gets upto 50% of what it was add Sugar,Nutmeg and Cardamom.
- Now continue boiling and scraping till 3/4 .add roasted Nuts,stir and switch off.
- Serve hot or chilled garnished with some more nuts.
Tips :
- Preferably use non stick vessel to make Basundi because Milk tends to stick at the bottom if not stirred continuously.
- To get thicker Basundi serve chilled in earthen pots.
- Milk which we have used has 6% fat.
