Kurkure is a well marketed popular snack and not so easy to replicate at home but let’s try to make this crisp and crunchy munch in a simple spicy way.
Ingredients:-
DOUGH
* 1 cup Rice flakes / Poha
* 1/4 cup Gram flour / Besan
* 1/4 cup Corn flour
* 1 tbsp Oil
* 1/2 tsp Carom seeds / Ajwain
* 1 cup Water
* 1/4 tsp Salt OR as per taste
* 1/4 tsp Baking powder
MASALA
* 1 tsp Kashmiri Red Chilli powder
* 1 tsp Chaat masala
* 1 tsp Tomato powder
Method :-
- Grind Rice flakes into a fine powder.
- Mix in Gram flour,Baking powder and Carom seeds.
- Keep Water to boil adding Salt and when the Water starts boiling add the flour mix.
- Switch off the stove mix till the flour takes in whole of the Water and then cover the vessel with a lid .
- Keep to rest 5-7 minutes.
- Now mix in Corn flour and Oil.Form a smooth crack free dough.
- Take a very small potion of the dough,knead it to make smooth.
- Roll between your palms or fingers of both hands to make Kurkure.
- Fry in medium hot Oil over low-medium heat till golden and crispy.
- Sprinkle a mix of Red chilli powder,Chaat masala and Tomato powder over the Kurkure when they are straight out of Kadhai.
- Serve eat or store in an air tight container when they come down to room temperature.
Tips :-
- While frying pot on the lid of your Kadhai with little gap became kurkuri tends to burst and crackle while frying.
