RAGDA
Ingredients:-
- 2 cups Dry Peas / Sukhi Matar Dal or Ragda
- Salt
- 1/4 tsp Baking Soda / Metha Soda
- 1/4 tsp Nigella / Kalonji
- 1/4 tsp Thyme / Ajwain
- 1/4 tsp Coriander seeds / Dhaniya
- 1 tsp Cumin / Zeera
- 2 tbsp Oil
- 2 Onions
- 1/2 tsp Ginger paste / Adrakh
- 1/2 tsp Garlic paste / Lasan
- 2 Green Chillies
- 2 Tomatoes
- 1/2 tsp Turmeric / Haldi
- 1/4 tsp Red chilli powder
- 1 tsp Garam Masala
- 1 tbsp Coriander leaves / Dhaniya
PATTIES
- 5 Boiled Potatoes
- 1 /2 tsp Cumin / Zeera powder
- 1 /4 tsp Pepper / Kali Mirch
- 1/2 tsp Dry Mango powder / Amchur
- 1/2 tsp Ginger paste
- Salt to taste
- 1-2 Green chillies
- 1 tbsp green Coriander leaves / Dhaniya
- 1/2 tsp Garam masala
- 1/4 tsp Turmeric / Haldi
- Oils
- 1/2 cup Bread crumb
Method:-
- Keep the Dry Peas soaked in water with a teaspoon of Salt and Baking soda for overnight or 8 hours.
- In pressure cooker heat Oil and in it add Nigella,Thyme,Coriander and Cumin.Let this to crackle for few seconds on low and then add finely chopped Onions.
- Sauté Onions on medium for 2 minutes and then add Ginger paste,Garlic paste and Green chillies.Continue sautéing till Onions turn golden brown and then add finely chopped Tomatoes.
- After Tomatoes get tender and mashed add soaked Dry Peas.
- Now add Salt if required,Turmeric,Chilli powder and 2 cups of Water.
- Pressure cook for about 10 minutes.
- After pressure settles down add Garam masala and Coriander Leaves.
- Meanwhile to make Patties mash boiled Potatoes and in it add Cumin powder,Pepper,Salt,Dry Mango powder,Ginger,finely chopped Green chillies,Coriander Leaves,Turmeric and Garam masala.
- Mix and mash all the ingredients together into a dough.
- Roll out small patties Out of the dough coating with bread crumb
- Drop couple of teaspoon of Oil on a griddle / Tawa and After it’s hot place the made patties on it.
- Shallow fry on medium till golden brown and crisp tilting upside down in between .
- Then drop the made a Dry Peas dal over the Patties.Add few teaspoonps of sweet’n sour Tamarind chutney,finely chopped Onion,Sev or bhujiya and Coriander leaves.
- Serve it.
Tips:-
- If you don’t have Coriander seeds,you can replace it with one teaspoon Coriander powder.
- Apply little Oil to your hands and add few drops to the dough if you feel the dough is too sticky.
- You can sprinkle some chaat masala over your chaat to make it more spicy or flavourful.
