Kong Phirun called in Kashmiri is an easy to make dessert with lots of dry fruits.Best to be given to new born babies this is an instant kheer with Saffron.

Ingredients:- ( Serves 4 )

  • 500 ml Milk / Doodh
  • 2 tbsp Semolina / Suji
  • 2-3 tbsp Condensed milk
  • 1/2 tsp green Cardamom / Hari elachi
  • Few strands Saffron / Kesar
  • 1-2 tbsp chopped Cashews / Kaju
  • 1-2 tbsp Raisin / Kishmish
  • 1-2 tbsp chopped Almonds / Badam
  • 1-2 tbsp Shredded dry Coconut or Coconut powder / Sukha nariyal

Method:-

  1. To a heavy bottom vessel add milk,stirring occasionally.
  2. Add Semolina,continue stirring over medium till you notice milk getting thick.
  3. Now after boiling for 2-3 minutes put heat to low,add Condensed milk,Cardamom powder,Saffron and dry fruits.
  4. Continue cooking on low till you get right consistency which is neither too thick or thin.
  5. Remove and serve hot or cold garnished with some more dry fruits.

Tips :-

  • Milk tends to stick at the bottom of the vessel so stirring in between is recommended.
  • To make Phirni more rich use full fat Milk.
  • Keep in mind when Phirni will cool down it will get more thick so cook accordingly.
