Shufta is a special Kashmiri dessert recipe made using lots of dry fruits with fried Cottage cheese cooked in a Sugar syrup.Come let’s make and enjoy this royal recipe.
Ingredients:-
- 1 cup Sugar / Chini
- 2 cup Water
- 2 tbsp Clarified butter / Desi ghee
- 1/4 cup Half Cashews / Kaju
- 1/4 cup Raisin / Kishmish
- 1/4 cup blanched slit Almonds / Badam
- 1/4 cup thin sliced dry Coconut / Sukha nariyal
- 1/4 cup Dry Dates / Chuvare
- 1/4 cup Cottage cheese cubes / Paneer
- 1/2 tsp green Cardamom powder / Hari elachi
- 1/4 tsp Cinnamon powder / Dalchini
- 1/4 tsp Dry Ginger powder / Sounth
- A pinch Cloves powder / Lounge
- 10-12 Black pepper corn / Kali mirch ke Dane
- Few strands of Saffron / Kesar
Method:–
- Heat 1 tablespoons ghee and over it drop all the dry fruits- Cashews,Raisin,Almonds,Dates and Coconut.
- Sauté over medium-high stirring continuously till light golden.
- Then strain out keep aside.
- Heat another tablespoon of ghee,now add Paneer cubes.
- Fry till the Paneer cubes turn golden.Then strain out.
- Next add Water and Sugar in the vessel along with few spices – Cinnamon,Cardamom powder,Dry Ginger powder,Peppercorns,Cloves and Saffron.
- When Water comes to boil add all the fried ingredients..Keeping heat low cover and let Shufta cook on low 10-12 minutes.
- Dry fruits get little soft and the Sugar syrup gets a Honey consistency .( Sugar syrup gets sticky like Honey and is nether too thick nor too thin )
- Enjoy warm as a dessert.
Tips :-
- Be sure before frying Paneer that ghee is hot,if its not hot Paneer might stick to the base of vessel.
- If you want to cut the quantity of ghee in your recipe take out the excess ghee after frying.
- Usually consistency of Shufta sugar syrup is on thicker side.
